Garlic Sauce
Ingredients:
1 Tbsp finely chopped garlic
1 tsp salt
1/2 cup white vinegar
1/2 cup purified water
Mash the garlic and salt together to form a paste. Stir in the vinegar and water.
Yield about 1 cup sauce.

Sicilian Spagetti Sauce
2 (28 oz.) cans whole tomatoes (reserve liquid for thinning)
1 (6 oz.) can tomato paste
1 (15 oz.) can tomato sauce
2 tbsp. sweet basil
2 tbsp. dried parsley
2 tbsp. sugar
1 tsp. garlic powder or 2 cloves garlic
8 oz. sliced fresh mushrooms, optional
1 lb. browned and drained ground beef, optional
Break up tomatoes in large saucepan. Add next 6 ingredients. Bring slowly to a boil, then cover and simmer 3-4 hours. Add optional ingredients in last hour of cooking. Uncover and simmer to thicken sauce; cover and add tomato juice to thin.

My Mammies Spagetti Sauce
1/2 c. Parmesan cheese
2 tbsp. parsley flakes
2 tbsp. oregano
2 tbsp. sugar
2 tbsp. salt
2 garlic cloves
3 bay leaves
2 (28 oz.) cans peeled tomatoes
2 (28 oz.) cans tomato puree
2 (8 oz.) cans tomato sauce
2 (6 oz.) cans tomato paste
56 oz. water
Brown garlic in teaspoon olive oil.
MEATBALLS:
3 lb. ground chuck
2 eggs
4 slices bread, drenched in milk
2 c. Italian bread crumbs
Salt and pepper to taste
2 tsp. oregano
2 tsp. parsley flakes
1 pkg. onion soup, lg.
Drop in sauce and simmer for over 3 hours.

Alfredo Sauce
1/2 cup cream cheese
1 cup milk 0-2 %
3 tbsp. freshly grated Parmesan cheese
1 clove garlic
1/2 tsp. salt
1/2 tsp. pepper (more or less, to taste)
3 tbsp. dry parsley or 1/2 cup fresh
The best way to make this consistent is to use a blender. Put cream cheese, milk, Parmesan cheese, garlic, salt and pepper in blender. Blend until there are no clumps, pour into saucepan on medium heat, cook for about 10 minutes. While cooking add parsley (if fresh chop finely) and save some for garnish.
Cook your favorite pasta - I recommend spaghetti. If you want you may add chicken, bacon or any of your favorite meats. I find it goes great with clams.
Pour desired amount over pasta. Cook selected meat in sauce to absorb flavor; If seafood, use a different pan and then add over pasta before pouring Alfredo Sauce.
If you find the original sauce using cream and butter to be too heavy, then this modified, lighter version may be a healthier choice for you.
Makes 3 or 4 servings.

Jalapeno Cheese Sauce
2 Jalapeno peppers
1 sm. can green chilies, finely chopped
1 can Campbell's Cheddar cheese soup
Stir together and heat in saucepan. Serve hot with nacho chips.
NACHO PLATTER:
Jalapeno cheese sauce, heated
Guacamole
Sour cream
Grated Cheddar and Mozzarella cheese
Taco sauce (optional)
8 oz. nacho chips
Heat nacho chips in 400 degree oven for 5 to 10 minutes. Have a large platter ready and all other ingredients on hand. Remove nachos from oven and spread out on platter. Spoon 1 cup Jalapeno cheese sauce over chips. Sprinkle grated cheese over all. Put a large scoop of Guacamole on one side of platter and a large scoop of sour cream on other side of platter. Serve taco sauce in separate container. Serve at once to 4 to 6 adventurous people who like to eat with their fingers.
