Refried Beans a la Mode

Refried Beans a la Mode

Ingredients:

2 Tbsp bacon drippings or vegetable oil
1 to 2 cloves garlic, finely chopped
1/4 tsp ground cumin
3 cups cooked and drained pinto beans
Salt and freshly ground pepper to taste
Grated Monterey jack or cheddar cheese

Heat the fat in a skillet over moderate heat and sauté the garlic and cumin for 2 to 3 minutes. Add the beans and mash with a potato masher or fork until thoroughly mashed.

Season with salt and pepper and simmer uncovered for 5 to 10 minutes. Serve topped with grated cheese.

Serves up 4 to 6.

Egyptian Style Lentils

Egyptian Style Lentils

Ingredients:

1 cup dried lentils
3 cups water
2 to 4 cloves garlic, finely chopped
1/2 cup olive oil
1/4 cup freshly squeezed lemon juice (less the rhine)
Salt and freshly ground pepper to taste
Lettuce leaves and chopped scallions for garnish

Combine the lentils and water in a pot over moderate heat and bring to
boil. Reduce the heat, cover and simmer for 1 hour.

Drain and refrigerate the lentils until chilled. Add the olive oil, lemon
juice, salt and pepper just prior to serving. Serve on a bed of lettuce and
garnish with chopped scallions. So wonderful!

Serves up 4 to 6 legume eaters.

Wild West Beans

1 lb. ground beef
1 onion, chopped
1 green pepper, chopped
1 (14-1/2 oz.) can kidney beans, drained
1 (14-1/2 oz.) can pork & beans
1 (15 oz.) can tomato sauce
3/4 c. brown sugar, packed
2 tsp. white vinegar
2 tsp. mustard

Brown beef with onion and green pepper in a 12" skillet; drain. Add remaining ingredients: simmer for 15 minutes. Place in a slow cooker: heat on low for 3 hours.

Serves 6.

Sweet and Spicy Baked Beans

1 large can of Bush's Original Baked Beans
1/2 cup brown sugar
1/2 cup sugar
2 1/2 tablespoons Habanero hot sauce
1 tsp. minced onion
1 lb. cooked, unseasoned, lean ground beef

Cook the meat drain beans (not completely but mostly drained). Place in 9x9-inch square baking pan.

Stir both sugars and sauce into beans. Allow to sit for 2 hours. Add hot sauce to beans and mix completely.

Bake in oven for 1 hour and 15 minutes on 350°F
