Zucchini Mini Pizzas
Large zucchini, cut diagonally into 1/4-inch slices
Prepared pizza sauce of your choosing (or tomato sauce)
Black and/or green olives, sliced
Scallion, finely chopped
Green or red bell pepper, chopped
Mozzarella cheese
Place the zucchini slices on a greased baking sheet and top with sauce, then olives, then scallion, then the pepper, then with the cheese. Cook under the broiler for 3 to 5 minutes, until the cheese is bubbly. Serve hot.
Serves 2 to 4.
