Zucchini Nut Loaf
1/2 c. walnuts, chopped
1 inch strip lemon peel
1 med. shredded zucchini
1 egg
1 1/2 c. flour
3/4 c. sugar
1 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. nutmeg
1/4 tsp. baking powder
Combine dry ingredients in large bowl. Add other ingredients, mix just until blended. Turn into 8-inch greased loaf pan. Bake at 325 degrees about 1 hour.
